Executive Chef Zac Ladwig

Wisconsin-native Zachary Ladwig was born to be a chef. Growing up in an agricultural area in Sheboygan, Wisconsin, his extended family grew their own produce, raised chickens and owned a cow. After summer trips to berry farms, Ladwig and his family would bring back baskets to process and preserve. It was during this time that he became interested in where the food he ate came from – the same curiosity that has made way for his remarkable culinary career.

Ladwig attended the University of Wisconsin where he earned a bachelor’s degree in Political Science. Following his education, he returned to his roots and started working at The American Club in Kohler, Wisconsin. Shortly after, Ladwig made the move to New York City where he worked at several Michelin star restaurants including Gordon Ramsay at the London, Bouley and Corton.

Following his tenure in the Big Apple, Ladwig accepted the role of executive chef at the only Forbes Travel Guide Five-Star restaurant in Texas, The Inn at Dos Brisas. During his time there, Ladwig managed the culinary team and created daily prix-fixe menus and specials that utilized fresh, organic ingredients from The Inn’s 24-acre garden.

After four years at The Inn at Dos Brisas, Ladwig relocated to Colorado where he served as the chef de cuisine at Forbes Travel Guide Five-Star restaurant, The Penrose Room at the Broadmoor. While at The Penrose Room, Ladwig created the seasonal menus for the French-inspired concept and mentored various chefs and apprentices in the kitchen.

With more than 17 years of professional experience ranging from five-star luxury hotels to Michelin star restaurants, Ladwig has become one of the best in the industry. As The Stella’s executive chef, Ladwig oversees the entire culinary staff at the hotel and curates the menus for each dining concept.

Ladwig currently resides in College Station, Texas with his wife Ashley, son Carter and boxers, Sophie and Bruno. When he’s not busy in the kitchen, Ladwig enjoys disc golfing and spending time with his family.
